FOUR PRACTICE APPLICATION

These applications give you variety without turning the course into recipe production. The focus remains on the skills you can carry to future menus.
Cold Composition
Create a balanced appetizer or salad with freshness, structure and visual clarity.
Hot Entrée
Reheat, correct and plate a main course with sauce and accompaniments.
Plated Dessert
Finish the final course with proportion, texture and clean presentation.
Plater Design
Build an individual presentation with contrast, spacing and inflight practicality.
